New Year’s Party Cheese Balls

Need a New Years app? Make your own fancy cheese balls. Roll 2 inch sections of a goat cheese log into a ball and roll in anything. Chives, crushed walnuts, cranberries, and sunflower seeds were pretty tasty.

Bloody Pina Coladas

Bloody Pina Coladas. Little set-up is needed. I found this tasty looking recipe on MarthaStewart.com, but I wasn’t hot for the corn syrup. I used her drink recipe and added homemade raspberry syrup to rim the glass and make a bloody mess. Just heat a few cups of frozen raspberries, mix with sugar and voila!

Whisk together drink ingredients. Place 2 1/2 cups ice in a blender, and add 1 cup drink mixture. Blend until smooth; add more pineapple juice if mixture is too thick. Repeat with remaining ice and mixture. Carefully pour into prepared glasses; serve. Link

Stuffed Jack O’ Peppers

Carved peppers filled with tasty brains. This is a super easy and healthy Halloween dish adapted from a recipe on The Meltaways. It might even get your kids to eat (gasp) something besides sugar on Halloween. I made a vegetarian version here, but you can easily make it vegan by omitting the cheese or carnivore by using real sausage. Really, you can stuff these guys with anything – bonus points if it looks like brains.

 

 

Sausage and Pasta Stuffed Jack O’ Peppers

 1. Compile tasty ingredients

2. Carve faces on peppers

3. Carefully cut off top and clean the inside

4. Mix tasty ingredients – I cooked pasta, onions, garlic, and vegan Italian sausage and then mixed it with cherry tomatoes, fresh basil, fresh parsley, and mozzarella chunks.

5. Stuff your peppers with the mix and replace top

6. Bake at 350 for 10-20 minutes

Surprisingly, we found the best ideas over at MensHealth.com. Take a look at these 3 simple ways to get your fridge in order and your diet back on track.

1. Shelve Strategically And Hide The Junk

Fill your eye-level shelf (or top shelf) with fruits, vegetables, and other nutritious snacks. You’re 2.7 times more likely to eat healthy food if it’s in your line of sight, a Cornell University study says. “That’s also why manufacturers pay a premium to have their products at eye level in stores,” says Kit Yarrow, Ph.D., a professor of psychology and marketing at Golden Gate University.

In a 2009 Danish study, one in four participants who chose a healthy snack over an unhealthy one later reached for the junk anyway. So place the healthy stuff front and center, and stash small guilty pleasures out of sight.

2. Pack Smart

A variety of small leftover containers tempt you to eat more than you planned, says Brian Wansink, Ph.D., author of Mindless Eating: Why We Eat More Than We Think. Instead, combine leftover entrees and sides so that each container has one meal’s worth.

3. Shop More, Buy Less

Instead of laying in supplies for the week, hit the supermarket more often and buy only for the next few meals. An overload of choices at home may deplete your willpower, a 2008 Journal of Consumer Psychology study found. “And people tend to reduce consumption when resources are scarce,” Yarrow says.

15 Minute Low Fat Taco Dip

Ah, the Super Bowl. If you’re lucky enough to have your team in the Super Bowl, then the day is filled with excitement and drama. For the rest of us, the day is filled with advertising and food. Here is a simple Taco Dip that won’t send you into cardiac arrest. To cut out saturated fat, use a vegetarian ground beef substitute like Fantasic Taco Filling or Morning Star Ground Beef (frozen). If you’re cutting out fat completely, make the dip without guacamole. You should consider that the fat in avocados is monounsaturated – the kind that lowers cholesterol levels. It’s important to get these good fats in your diet. Now, grab some tortilla chips and enjoy the game!

1. Cook ground beef substitute in a pan per package instructions. If you like a little heat, add in a spicy taco seasoning packet to the pan while cooking.

2. Heat a can of fat free refried beans mixed with a can of diced green chilies and hot sauce to your taste.

3. In an oven safe bowl layer the cooked ground beef substitute on top of the refried bean mixture.

4. Layer grated fat free cheddar cheese on top and bake until melted. (Who are we kidding, we’re all microwaving this thing.)

5. Top with guacamole, fat free sour cream, shredded lettuce, and diced tomatoes.
